The Prince of Wales has teamed up with popular YouTube channel Sorted Food to create the first Earthshot Burger. This veggie burger is made with Earthshot Prize-winning products, and a video on YouTube shows Prince William handing out meals from a food van in central London with the Sorted Food chefs. The burger is filled with vegetables, spices, pickles, and finished with a minty vegan mayonnaise. It was developed by sustainable packaging start-up Notpla, environmentally-friendly stove company Mukuru Clean Stoves, and Kheyti’s Greenhouse-in-a-box.
This collaboration is part of The Earthshot Prize’s new partnership with YouTube, which aims to encourage users to create more content around climate change. Now, let’s take a look at how you can make your own Earthshot Burger at home.
For the pickle, you will need 1 cucumber and 1 mouli, both sliced into 2mm slices. In a large mixing bowl, mix the sliced cucumber, mouli, and 1 tablespoon of salt. Allow it to sit for 30 minutes. In a medium saucepan, bring 400 milliliters of water, white wine vinegar, sugar, and spices to a simmer. Once simmering, remove the pan from the stove. Rinse the salted cucumber and mouli under cold running water and add them to the warm pickle liquid. Stir well and allow it to cool.
For the burger mix, heat vegetable oil in a large saucepan over a medium heat. Add cumin seeds and mustard seeds, and fry for 2 minutes until fragrant. Then, add onion, garlic, ginger, and chillies, along with a pinch of salt, and continue to fry for 5-7 minutes until the onion starts to color. Add the spices and stir to combine. Tip in the sliced pepper and cook for 5 minutes until it softens. Add cabbage, cauliflower, and green beans, stir everything together, cover the pan, and let the vegetables soften for 5 minutes. Coarsely mash the potatoes in a bowl and add them, along with coriander, to the pan. Stir everything together and adjust the seasoning. The mixture should have a thick mashed potato texture.
For the sauce, blend vegan mayonnaise, coriander, mint leaves, ginger, and a pinch of salt until smooth. Adjust the seasoning to taste.
To serve, divide the mashed potato and vegetable filling between toasted burger buns. Top each with a couple of pinches of pickled vegetables and finish with the herb sauce.
